This week TWD is celebrating St. Patrick’s Day by baking the traditional Irish Soda bread.
Irish Soda bread is a quick bread that uses baking soda as a rising agent instead of the traditional yeast. You must be wondering how quick are we talking about ….. well let me tell you 5 minutes !!!!
There are so many people out there who would love to bake bread from scratch but are intimidated by the process of letting it rise and kneading it. This recipe is good news for all of them. It requires no rising time and absolutely no kneading. All you need is just 4 ingredients and an appetite for a fresh out of the oven home made bread and you are good to go.
It was very easy to put together the dough which was quite sticky and soft. The dough was then kneaded with a light hand for about a minute. Although I really had to struggle not to get tempted to knead the dough for longer. It rose beautifully in the oven. The texture of the bread was just perfect.
I made two of these beauties, one was plain and I studded the other one with mini chocolate chips. Both tasted lovely, Although I will have to try this bread again with some raisins or maybe some dried cranberries.
I enjoyed my bread with a hot bowl of lentil Soup …. Perfect for a chilli evening.

I agree this bread is perfect for those who want bake bread but are not confident or inclined towards the kneading!! :) I had mine with a lamb stew..next time.. probably some cheese variation to the bread!!

They were very Airy … I think so too that kneading with a light hand made a difference… it was basically just getting the dough together rather than kneading

- dried cranberries: great
- chocolate chips, raisins and natural vanilla extract / flour 50% plain, 50% APF: great
with raisins and cinnamo flour 50% plain, 50% APF: great
I just cannot stop baking it (and eating it) :-)
I would love to try it with Cinnamon next time !!!

I do like the fact that no yeast was needed in this bread. Your loaf turned out great!
